My go-to lunch

The older I get, the more conscious I am of what I’m eating and how it makes me feel. Food literally can be the fuel for your day, so I’ve recently made a shift to eat AS MANY PLANTS AS POSSIBLE. 

If you’re following on IG, you’ve seen the smoothies I’ve been making and a little here and there of the things I like to eat throughout the day. So today, I wanted to share what I’ve been doing for my lunch with MorningStar Farms® Spicy Black Bean Burgers. Eating plant-based can be kind of challenging because there is a lot of prep that has to go into it. I’ve figured out a way to make it as easy as possible to keep me on track. 

I really like to cook once and eat it throughout the week. For my lunches lately, I have been creating a little lettuce wrap burger—piled with a ton of other veggies. It’s so easy and you can keep your chopped veggies in a container throughout the week to easily use.

My Go-To Lunch:

MorningStar Farms Spicy Black Bean burgers
Head of Lettuce
Tomato
Purple Onion 
Avocado
Parchment paper (optional)

  1. Use the stove-top directions on the back of the burgers to heat them up. Once crispy, remove from heat.
  2. Cut up your veggies, wash the lettuce head, and remove large pieces of lettuce to wrap the burger in.
  3. Lay your lettuce piece flat, pile on each of your veggies, and wrap it like a burrito with the top of the burger sticking out.
  4. Using parchment paper, wrap it again. This allows you to eat the burger without things falling out of it. Very helpful when you use lettuce as a wrap.
