Easy Meal Prep: Greek Salad

One thing I forgot to mention in my How To Survive a Busy Week, was the importance of meal prep! What was I thinking?! You may know by now, that in addition to posting on Arrows & Awe twice a week and my Instagram daily, I work a full-time job in a bank. I try really hard to balance it all and one of the major ways I do, is by making sure my breakfast and lunches are prepped and ready for the week ahead. I don’t like to eat out at work (it’s ok every once in a while), I think restaurants give too much food and I’d rather eat something that I know is healthy. 

I’m pretty ok with repetition and eating the same thing day after day, which makes this even easier. I’m all about simplifying and making one batch to be portioned throughout the week does wonders for saving time.

My go-to quick and filling lunch has been this greek salad.  This recipe makes enough for one person, so double up if you’re making for two.

what you need:

2 green peppers
baby tomatoes
1 pack of chicken tenderloin 

1 red onion
sliced (time saver!) Kalamata Olives
crumbled feta cheese
1 bottle of Goya Mojo Criollo

I automatically know what you’re thinking.. Goya Mojo Criollo does not belong in a greek salad. However, it makes the chicken so moist and delish I just cannot live without it. Plus, it barely changes the taste. Just go with it. 

  • Pour the Goya Mojo Criollo in a bowl and add the chicken to marinate about 15 minutes
  • Preheat oven to 350
  • Bake chicken for 20 minutes
  • While the chicken bakes, cut your green peppers, tomatoes and red onion . Throw them in a bowl 
  • top with feta cheese and a ton of kalamata olives – I don’t use dressing because I use the juice from the olives instead. I love olives, stop judging me.
  • Once the chicken is done, I tear it apart and then portion the salad into Tupperware to easily grab throughout the week

There you have it! Meal prepping is my BFF. I like to stick to very easy recipes because I like it simple. I’d love to know if you have any easy recipes I can try!
